Pasta

I was in the mood to experiment tonight so after checking recipes online and going with ingredients I had around here, this is what I came up with. It was really good! Even Derek liked it (he did pick out the broccoli)

CHICKEN AND PASTA WITH BROCCOLI

4 garlic cloves, minced
1/4 c. olive oil
1 lb. chicken breast, cut into small pieces
2 cups. broccoli florets, chopped
2 cups sun-dried tomatoes, cut in small pieces
2 tbsp pesto or 2 tsp. fresh basil, chopped fine
Pinch red pepper
2 cups low salt chicken broth
14 oz package brown rice fettuccine, broken in thirds (Tinkyada brand is the best)
Fresh ground Pepper to taste
Grated fresh parmesan cheese
pine nuts, optional

In large skillet, sauté chicken and garlic in 2 tbsp of olive oil. Set aside. In same skillet, sauté broccoli until crisp tender. Add chicken mixture and remaining ingredients except pasta. Simmer for 20 minutes to blend flavors.

Cook pasta according to package directions. Drain and mix into chicken mixture. Let stand for 5 minutes to let pasta absorb liquid. Serve with grated cheese and pine nuts.

Serves 4-6 people.
