GF Applesauce Spice Cake

I didn't intend for this to be a recipe blog, but it's kind of becoming that way. I just love to cook and experiment with new gluten-free recipes so I want to share when I get a good one. This is!
GF Applesauce Spice Cake

I modified this recipe from my Grandma IvaLou’s recipe. It turned out yummy!

2 cups featherlight flour mix (or 2/3 cup brown rice flour, 2/3 cup cornstarch, 2/3 cup tapioca starch)
1/2 cup sugar
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
1/2 tsp. salt
2 tsp. soda
½ tsp cream of tartar
1 tsp xanthan gum
1/2 cup oil
2 eggs
1 ½ cups applesauce
1 cup chopped walnuts
1 cup raisins

Combine all dry ingredients in a mixing bowl. Add remaining ingredients and mix well. Pour into a lightly greased 9x13 pan. Bake at 350 for 40 minutes or until cake passes toothpick test. Cool slightly and cover caramel icing recipe below if desired.

CARAMEL ICING
1/4 - 1/2 cup butter
1 cup brown sugar
1/4 cup milk
1 3/4 - 2 cup powdered sugar
Melt butter and add brown sugar. Cook together until thick (about 2 minutes). Add milk, continue to cook until mixture comes to a boil. Cool. Add sifted powdered sugar to right consistency. Spread immediately as it sets up quickly.
